Butternut squash and coconut Milk puree

Servings: 10 servings
Ingredients
  • 500 grams Butternut squash cut in chunks
  • 1 whole White onion finley chopped
  • 1 tablespoon Garlic finley chopped
  • 1 stalk Lemongrass finely chopped
  • 2 teaspoons Ginger finley choped
  • 1 tablespoon Ground Coriander
  • 1 can Coconut milk 225ml
  • Water
  • Olive oil
Directions
Peel, deseed and chop the butternut squash in cubes. Chop the rest of the ingredients. Fry the onion, garlic, ginger and lemongrass. Add ground coriander and add butternut squash. Add water just to cover the ingredients and simmer for 20 minutes. Add coconut milk and simmer till all the ingredients are soft. Let it cool take the lemon grass stalks out, and blend it for desired consistency
